For some reason, lunch always seems to be the meal I struggle to make the most. You would think after all these years of eating it I would know what to make. Every week though, I struggle to figure out what I’m going to have. Now that I’m working several days a week it’s important I always have food to fall back on though. Here are some meals I’ve been enjoying recently.
Sandwich Bento Bowls
I found these on Pinterest a couple of weeks ago and I’ve been obsessed ever since. It’s basically a tiny amount of a whole bunch of super yummy lunch foods.
My “bowls” usually consist of some combination of cheese, lunch meat, tomatoes, grapes, Wheat Thins and lightly salted peanuts. I try not to pack too much of any one thing because I don’t want to overeat and when you add all the food together it’s plenty.
One of my favorite foods to eat is tuna (in a salad, not alone – yuck!). I usually try to mix in as many veggies as possible so it’s more filling and nutrient packed. Some of my go to ingredients include pickle relish, onion, carrots and celery.
I tend to eat tuna with crackers or on a sandwich and mix it up by adding sides such as fruit, yogurt and granola bars.
Another food I enjoy frequently is wraps. I typically use a lunch meat and add mayo or mustard, lettuce and occasionally tomato or pickles (my favorite!). They’re just so easy to make and throw together with any leftovers laying around. Some days they’ll be plain and other days it will appear as though my entire fridge was fit onto one wrap!
Chicken Caesar Salad
There are so many ways to have chicken caesar salad, making it such as easy lunch choice. When I’m at the grocery store I buy chicken, shredded lettuce, tomatoes and sometimes parmesan cheese and croutons. When I get home from the store I cook and shred the chicken in a crock pot and all I have to do is put my salad together.
I typically have chicken caesar salad as just that, a salad. I also like to enjoy it with pasta or in a wrap depending on what’s available. It’s one of those meals where you can have just the lettuce, chicken and dressing or you can add any combination of other ingredients making it a good meal no matter when the last time you went to the grocery store was.
As obvious as it sounds, why reinvent the wheel? If I had a meal the night before there’s nothing wrong with eating it again if it was just that good. It makes it easier to figure out what you’re going to have if you know there’s food in the fridge that needs to be eaten. Some of my recent leftovers have included pizza, pasta and taco salad.
